Health in a Hurry Recipe: Spring Salad with Grilled Chicken

Ingredients

  • Spring lettuce salad mix
  • Tabouli
  • Grilled Chicken Breast
  • Grilled Red Peppers and Red Onions
  • Feta Cheese
  • Light dressing
  • Garlic and Olive Oil Sourdough Toasts

Directions

This is sinfully easy! I must admit that I purchased the Tabouli at Costco! Fabulous stuff.

It seems so much like summer I couldn’t wait to fire up the grill and get cooking!

I grilled the chunks of Red Peppers and thick slices of red onions until they were soft and browned. Peel off the red pepper skins and dice all of them up. I store the veggies separately from each other until I serve them so they keep their separate flavors.

I marinated the chicken in “greek spices” with a little olive oil and pepper. Grill them until done but not dry. Let them cool off and dice them too. Refrigerate overnight. Save as much of the juices from the chicken to keep them moist until you serve them up.

Assemble

Toss lemon juice, olive oil, pepper and garlic POWDER with the salad mix, add tabouli thinly in the center of the bowl, layer chicken around the outer edge, add to the center the red peppers and the grilled onions. Sprinkle feta cheese on top. Serve with the sourdough toasts

Fresh strawberries are a spring fruit so keep buying them they will get juicier and juicier as we head into summer!
